The “No Doubt” Italian Sandwich

Ingredients:
8 oz. fresh mozzarella; sliced
Italian bread (one loaf)
1 jar roasted red peppers (we like Mezzetta)
Olive oil
3 garlic cloves; chopped
Red wine vinegar
1/2 lb. Breaded chicken cutlets
Balsamic glaze
Salt & pepper to taste
Garlic powder to taste
Ahead of time, we like to marinate our jarred roasted red peppers in a mixture of olive oil, red wine vinegar, and a few garlic cloves. This is not a requirement, but a nice option.
Cut the ends off your Italian loaf and slice it in half down the middle (creating a top and bottom for your sandwich). Place cutlets (about 3 will probably fit) on the bottom half of your bread.
On top of your cutlets, layer sliced mozzarella and roasted red peppers. Season peppers with salt, pepper, and garlic powder. Drizzle olive oil and balsamic glaze over peppers. Take top of bread and press over sandwich.
Slice in half and serve!!!
Notes:
This is a great sandwich to make with leftover cutlets. We make cutlets in our house usually once a week. They are great on their own, or used in other recipes, like this sandwich!!!
Make sure you get yourself a nice loaf of Italian bread from a bakery.
