Grilled Pineapple

Grilled Pineapple

Servings: 4

Ingredients:

  • 1 ripe pineapple

  • 1/2 stick butter, plus 2 tbsp. butter

  • 1/4 cup brown sugar

  • Dash of nutmeg

  • Vanilla bean ice cream

Turn burners on gas grill on high (400-450 degrees).

In a cast iron skillet, add 1/2 stick butter, brown sugar, and nutmeg. Place skillet on grill to melt butter.

While your skillet is heating, use a pineapple corer to core the pineapple. The corer will slice the entire pineapple into a perfect ring that you can into individual round slices. If you don’t have a corer, simply remove skin and cut pineapple into thin slices that you can lay flat on the grill.

Once butter is melted, use a wooden spoon to combine ingredients.

Remove cast iron skillet from the grill and place onto a heat safe surface, like a large cutting board.

Dredge pineapple slices, both sides, in the butter sauce. Place each slice onto your grill and grill on both sides until grill marks appear.

Once grilled, remove pineapple slices to a serving plate.

Add extra 2 tbsp. butter back to skillet, and heat remaining butter sauce again.

Poor butter sauce evenly over your pineapple slices. Place a couple scoops of vanilla ice cream in the center of the dish and serve!
