Mozarella In Carrozza (Italian Fried Sandwich)

Ingredients:
16 oz. fresh mozzarella; sliced
1 loaf sliced white bread
2 cups all-purpose flour
4 eggs, whisked
2 cups Italian bread crumbs
Optional fillings: crispy prosciutto, sun-dried tomatoes, anchovies, basil
Olive oil - enough to coat the pan about 1-1 1/2”
Spicy tomato sauce (for dipping) (optional)
Fresh Pecorino Romano or parmesan cheese, grated
For this recipe, we made three sandwiches, three ways. You can be as simple or creative as you like with the filling. Whatever you add to your sandwich, the steps will be the same.
You can buy pre-sliced mozzarella or fresh mozzarella and slice it into 1/4” thick round slices. Lay it out on a paper towel and pat dry to remove excess moisture in the cheese.
In three large or medium bowls, put flour in one bowl, whisked eggs in the second bowl, and bread crumbs in the third bowl.
Line a baking sheet with parchment paper to set sandwiches on before frying. This just makes for an easy clean-up.
Take one slice of white bread and place about 3 slices of mozzarella onto the bread. Add any additional toppings you like. We did one sandwich with crispy prosciutto and jarred sun-dried tomatoes, one with finely diced anchovies and basil, and one with just plain cheese.
Once you have your desired filling, top the sandwich with another slice of bread. Remove the crusts from all 4 sides on the sandwich.
Dredge both sides of the sandwich in the flour. Then dip the entire sandwich in the eggs. Then dredge the sandwich in the bread crumbs. Set aside on the lined baking sheet. Repeat this process for all sandwiches.
Add oil to a deep skillet and set heat to medium. When oil is warm, add your first sandwich. Fry each side until golden brown, making sure to not burn them. Once done, remove to baking sheet and repeat the process for each sandwich.
We like to cut each sandwich in half on a diagonal. Grate fresh cheese on top of each slice and serve with a side of spicy tomato sauce for dipping. Just like a mozzarella stick!
Notes:
Please avoid buying some fancy artisanal bread. This recipe is best made with some good ole’ store bought white bread! Feel free to get as creative as you like with the filling for the sandwiches. We love to serve these as a fun appetizer or late night snack.
