Pesto Sauce
the “use it on everything” sauce.

Servings: 4
Ingredients:
Olive oil
2 large garlic cloves
1 1/2 - 2 tbsp. pine nuts
3 oz. fresh basil
1/4 parmesan; freshly grated
Salt to taste
Add 4-5 tbsp. olive oil and garlic to food processor and blend until garlic is fully pureed. Add pine nuts to food processor and blend completely. Add basil, parmesan, a pinch of salt and a drizzle of olive oil and blend.
Once blended fully, remove lid from food processor and determine if more olive oil is needed. You want to get to the consistency of a thick sauce - not too pasty. Add more olive oil as needed and blend until desired consistency is reached.
Serving options are endless!
If using this recipe as a pasta sauce, toss cooked pasta in sauce in a large pan on the stove top and add olive oil and pasta water as needed and serve hot with freshly grated parmesan cheese.
Spoon over chicken, fish, beef, or veggies
Serve as an appetizer dip with toasted bread/cheese/veggies
Add to eggs
Use as marinade
Add oil/vinegar to make a pesto salad dressing
Add spoonful to your favorite soup

Notes:
With the measurements provided, we were able to make this in a mini food processor. It makes enough pesto to add to a meal for 4 people. If you would like to multiply the recipe and make more at one time, you will need a full size food processor.
