Shrimp Salad

Ingredients:
Celery - 2 large stalks; diced
1 lb. cooked shrimp
1/2 Avocado; chopped
1 pint cherry tomatoes (halved)
1/2 red onion; diced
1/2 lemon
2 garlic cloves; minced
1/4 cup olive oil
1/8 cup red wine vinegar
2 tbsps. fresh parsley, chopped fine
1/2 tsp. oregano
Salt & pepper to taste
Garlic powder to taste
Crushed red pepper to taste (optional)
Rinse shrimp and remove tail. Cut into quarters. In a large bowl, add your shrimp, celery, tomato, onion, and avocado.
Add olive oil, vinegar, and juice from half a lemon. Continue to add the remainder of ingredients and stir together thoroughly. Our suggestion is to use our measurements as a guideline, but taste as you go and add more of less of something to your taste.
Serve immediately or refrigerate and serve later.
Notes:
This salad is delicious no matter what, but we suggest making this about an hour ahead of your serving time, and refrigerate until serving. Letting the shrimp get very cold and marinate in the dressing makes it that much better.
