Spicy Grilled Cheese

Servings: 1-2

Ingredients:

  • 8 oz. fresh mozzarella; sliced

  • 2 large deli slices sourdough bread

  • Salted butter

  • Trader Joe’s Italian Bomba Sauce

  • Garlic powder to taste

Butter both slices of bread - all sides. That’s right, all 4 sides. We didn’t say this was low-cal. Spread Bomba sauce on 2 sides (inside of your sandwich). Layer your mozzarella slices on one side of your sandwich and sprinkle with garlic powder. Put top slice of bread on sandwich and prepare to grill.

On a grill pan (or panini press), coat pan with butter and place sandwich in pan on medium heat. Take a clean dinner plate and place on top of sandwich. The weight of the plate helps infuse the grill marks on the sandwich.

You want your sandwich golden brown on both sides. After about a minute of grilling, check the bottom of your sandwich, and if it’s getting toasted, flip it over with a spatula and toast the other side. You have to eyeball it. Keep flipping until you get your desired level of “toast” on each side.

Remove from pan, slice in half, or fourths, and enjoy immediately.

Notes:

We love large sliced sourdough bread for this recipe, but you can use any bread you want, as long as it’s sturdy enough to hold the weight of the cheese. Wonder Bread is no good! Too flimsy.

Optional additions: roasted red peppers, prosciutto, jalapenos, etc.

For the mozzarella, we suggest a pre-sliced mozzarella log. Found at any local grocery store or Trader Joe’s.
