Teriyaki Skirt Steak Nigiri

Ingredients:
2-3 lbs. skirt steak
1 bottle teriyaki marinade (see notes)
2 cups sushi rice (see notes)
2 2/3 cups filtered water
1/3 cup seasoned rice vinegar
1 bunch green onions, chopped fine
Toasted sesame oil
Sesame seeds
Marinate steak in teriyaki sauce at least 2 hours before cooking (the longer the better, but skirt steak absorbs marinade quickly, so you can get a good flavor with a short amount of time). Smother steak in marinade in a large bowl or container. Cover and refrigerate until you’re ready to grill.
About 30 minutes before serving time, start rice in a rice cooker. Add rice and water to rice cooker. Do not rinse the rice. Set rice cooker to the white rice setting, which should be about 20-25 minutes cooking time.
While rice is cooking, grill the steak. We prefer our steak medium rare (the right way to eat steak) - so we grill our steak about 3 minutes on each side. Let steak rest about 10-15 mins before cutting. We also suggest saving your excess marinade to pour over the steak and rice when serving, so set aside the bowl of marinade.
When rice is done, open rice cooker lid, add rice vinegar and stir in gently.
Cut your steak into thin strips (about 1” wide).
Add the excess marinade sauce to a small saucepan and heat until warm on medium heat.
We like to use the sushi rice mold (see product link below) to create the perfect nigiri rice serving on the plate. If you don’t have a rice mold, a heaping spoonful of rice will do. Fill rice form with sushi rice and drizzle toasted sesame oil over rice. Layer steak slices over rice. Pour heated marinade sauce over the steak and rice. Garnish with green onion and sesame seeds. Serve and enjoy!

Steak:
We always suggest getting your meat from a reputable butcher or grocery. As with most everything, you get what you pay for!
Marinade:
Feel free to make your own teriyaki marinade at home. We like to present the most simple and quick option possible for this recipe so we used a store bought marinade. We like the Trader Joe’s “Soyaki” marinade or the brand, “Soy Vay” which can be found at most grocery stores.
Rice:
Our favorite brand of sushi rice is Nishiki Premium Grade Sushi Rice. You can certainly use any rice you like, but the sushi rice is extra sticky and we love to serve the rice like nigiri.
