Asian Fried Riced Caulifower

Ingredients:
20 oz. (2 bags) frozen riced cauliflower
Olive oil
Salt & pepper
Garlic powder
Crushed red pepper (optional)
1/4 cup soy sauce
3 eggs; whisked
Sesame oil
Green onion
Sesame seeds
Remove riced cauliflower bags from freezer and let thaw for about 30 minutes. Remove from bags and place in large bowl or colander, and pat dry with paper towels. It’s best to remove as much moisture as possible. You can also rice fresh cauliflower if you like, but we have found the frozen to be time saving and just as good!
Coat a large skillet with olive oil. Turn heat to medium and add cauliflower. Stir so olive oil coats the cauliflower. Add salt, garlic powder, black pepper, and crushed red pepper to taste. Add soy sauce and combine. Cauliflower should start to brown and become tender. Add butter and combine. Add egg and fold in until eggs are evenly combined. Should look like fried rice!
Taste before serving and add any additional seasoning it might need. Spoon into serving bowl and garnish with sesame oil drizzle, chopped green onion, and a sprinkle of sesame seeds.
Notes:
We love this recipe as a low carb option. While nothing can truly take the place of rice, this is an easy and delicious alternative. We serve this as a side dish, or use it to make individual cauliflower rice bowls, to which we add grilled chicken, beef, or shrimp.
