Grilled Filet Mignon with Peppercorn Sauce

Filet Mignon

Servings: 2

Ingredients:

  • 2 8 oz. cuts filet

  • Salt & pepper

    Peppercorn Sauce:

  • 1/3 cup brandy or cognac

  • 3/4 cup beef broth

  • 1/2 cup heavy cream

  • 2-3 tsp. whole black peppercorns; crushed

Make sure you bring your steaks to room temperature before cooking if they are being taken out of the refrigerator. Salt & pepper your steaks generously on both sides. Turn on grill medium to high heat. Once your grill is hot, cook steaks 4 minutes on each side. Do not flip them constantly. Let each side cook.

Sauce: Add your alcohol to a medium sauce pan and bring to a simmer on medium/high until it has mostly reduced and you can no longer smell the alcohol. Add beef broth and bring to simmer until it reduces to about half. Turn heat down to medium and add cream and peppercorns. Stir and continue to simmer until it thickens. Do not let it boil. Taste sauce and add salt/pepper as needed.

Plate steaks and pour peppercorn sauce over each filet.
