Party Nachos

Party Nachos

Servings: 6

Ingredients:

  • 2 lbs. 80/20 ground beef

  • Tortilla Chips

  • Tostitos Queso Cheese (or nacho cheese of your choice)

  • 1 can black beans; drained and rinsed

  • 1 small can black olives; drained

  • Pickled jalapenos; drained

  • Fresh pico de gallo

  • Salt & pepper

  • Garlic powder

  • Olive oil

  • Crushed red pepper

To cook ground beef: Coat large skillet with olive oil. Add ground beef to pan. Break up in pan and add salt & pepper, garlic powder, and crushed red pepper to taste. Cook over medium heat until brown.

In a small sauce pan, heat queso over low to medium heat until hot.

Cover large baking sheet with foil. Add tortilla chips to baking sheet and put in oven on medium broil for about 2-2 1/2 minutes. You want your chips warm and slightly toasted. Make sure to watch so they don’t burn.

Take your warm chips out of the oven and drizzle the queso evenly over your chips. Next use a slotted spoon (you don’t want too much of the liquid from the meat as it will make your chips soggy) to evenly spoon meat over the queso. Then add your remaining garnishes: black olives, black beans, jalapenos, and pico de gallo; amount of each to your taste. Make sure all ingredients are distributed evenly so every bite is full!

Notes:

Serving suggestions: Put baking sheet of nachos on counter top, and let people take individual servings from the sheet. We suggest if you would like to add other “wet” ingredients such as guacamole, sour cream, and/or salsas, to serve those in bowls on the side so people can add those to their servings if they like. We have found it is difficult to evenly distribute these ingredients on the large serving of nachos and can also make chips soggy.

We like using fresh pico de gallo because it contains tomato, onion, and cilantro all in one and adds a really nice fresh flavor to the nachos. We like to buy the pico de gallo from the refrigerated section of the grocery store.
