Nan’s Fried Chicken Nuggets
Better than McDonalds.

Servings: 5-6
Ingredients:
5-6 boneless skinless chicken breasts, cubed
2 cups all purpose flour
Salt & Pepper to taste
3 eggs, beaten
Vegetable oil
Kosher or sea salt
3 lemons, sliced into wedges
Cut up chicken breasts into 2” cubes.
In a medium bowl, whisk eggs until beaten.
In a large bowl, add flour and a generous amount of salt & black pepper to taste. Combine.
Dredge chicken cubes in egg wash so all pieces are fully coated. Then dredge chicken pieces in flour mixture until full coated. You can do this in stages and remove floured chicken pieces to a tray until all pieces have been coated in the egg and flour mixture.
Once all pieces of chicken are coated, you are ready for frying.
In a large, deep frying pan, fill pan about 1/4 full with vegetable oil. Turn your burner on medium heat. Before you start frying your chicken, make sure your oil is hot. You can test this by splashing the oil with a little water from your hand - if it sizzles, it’s ready.
Add chicken piece by piece to the oil - make sure not to crowd your pan. Fry chicken peices on each side - about 2-3 minutes per side, or until golden brown. Removed cooked chicken to a serving tray, and immediately sprinkle each nugget with kosher or sea salt and squeeze lemon juice over each piece while the chicken is still hot. We like to use a hand juicer.
Repeat this process until all chicken nuggets are cooked. Serve on a large platter with lemon wedges for garnish.
Notes:
We always suggest getting really high quality ingredients. You can certainly get your chicken from the local grocery store, but we always find the chicken from the butcher is much better.
You can certainly serve your chicken nuggets with your favorite dipping sauces i.e. ketchup, ranch dressing, hot sauce, BBQ sauce, etc. However, we urge you to try a piece of chicken with just the salt and lemon. You will likely find the simplicity of this preperation is so satisfying, you won’t want anything else. This is exactly how Gary’s Italian grandma used to serve this chicken, and we have to agree with Nan - the lemon and salt is the best way to eat these nuggies!
