Esquites Elote

Is it Esquites or Elote? It’s Mexican Corn.

Grilled Esquites

Servings: 4

Ingredients:

  • 6 Ears of Corn (Yellow or White)

  • 1/2 Cup Mayonnaise

  • 1/4 Cup Sour Cream

  • 2 Tbsp. Fresh Lime Juice

  • 1 Chipotle Pepper in Adobo Sauce

  • 1/2 Cup Cotija Cheese, grated

  • 1/4 Cup Fresh Cilantro, finely chopped

Chipotle Mayo:

In a food processor, mix together mayo, sour cream, lime, juice, and chipotle pepper until well blended. Set aside. This can be made right before you grill your corn, or the night before and refrigerated.

Corn:

Remove husks and thoroughly clean your ears of corn. Bring grill to about 450 degrees.

Place your corn directly on the grill, and close the lid, flipping about every 5 minutes. Grill corn until tender and starting to get grill marks, about 15 minutes total. Corn should be fork tender. Do not overly grill, as your corn will dry out.

Remove corn from grill when done, and cut kernels off with a knife and place into a serving bowl.

Slowly add your chipotle mayo to the corn, stirring as you add. Mix in your grated cotija cheese. You can taste as you go, and add more mayo, cheese, lime, etc. to your taste. Garnish with cilantro and serve.

Notes:

You can use white or yellow corn for this recipe. We prefer the yellow, as it tends to be sweeter and we like the bright color.

There are multiple ways to grill ears of corn: grilling them in the husk will create a steamed effect. Corn is less likely to dry out using this method, but you will not get the grill marks and will have less of the chargrilled flavor. You can also remove the husks and wrap your corn in foil and grill. You will have a similar outcome to grilling the corn in their husk. For this recipe, we prefer the grilled flavor, so we cook the corn uncovered directly on the grill, and make sure to not overly cook or dry out the corn.

You can find the ‘Chipotle Chilis in Adobe Sauce’ in a small can in most grocery stores - usually in the same aisle as peppers and hot sauces.
