Shrimp Po’ Boys
A decadent fried shrimp sandwich. Lawdy.

Servings: 5-6
Ingredients:
1-1.5 lb. medium peeled and deveined shrimp (uncooked)
1 tbsp. salt (more to taste if needed)
1 cup all purpose flour
3/4 cup cornmeal
1/2 tsp. cayenne pepper
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. ground pepper
1/4 cup mayonnaise
1 tsp. Trader Joe’s Bomba Sauce
a splash of Worcestershire Sauce
Vegetable oil for frying
Dijon Mustard
6 brioche rolls (or roll of choice)
1 beefsteak tomato
1 cup shredded iceberg lettuce
Sliced sandwich pickles
Butter
Fresh parsley
4-5 eggs
Instructions:
Batter Mixture:
In a medium mixing bowl, combine cornmeal and flour. In a separate mixing bowl, combine garlic powder, paprika, cayenne pepper, black pepper, and salt. Mix thoroughly. Take 2 tablespoons of the spice mixture and add it to your cornmeal/flour mixture. Combine.
In a large mixing bowl, whisk your eggs. Add 1 cup of your cornmeal/flour/spice mixture to your eggs, and whisk all together thoroughly until smooth. You should now be working with 2 bowls: Your remaining dry mix with cornmeal/flour/spices and your egg mixture.
Shrimp Time:
Take a few shrimp at a time and dip them in your dry mixture. Then dip them in your egg mixture, and back again in your dry mixture. (that’s 3 total dips). Once shrimp are coated, place on cooking rack. Repeat until all shrimp are coated. Place battered shrimp in the refrigerator for 30 mins.
Frying Time:
Fill a large pot (we like a Dutch oven) about halfway with vegetable oil. Heat your oil on medium-high. Once hot, start dropping your shrimp in the oil. Fry each shrimp about 2-3 mins until golden brown. You don’t want to overcook them. Strain cooked shrimp from oil and place on a paper towel to drain some of the oil.
Sauce:
In a bowl, mix your Bomba sauce, mayonnaise, and Worcestershire together and set aside.
Assemble:
Take your bun and smear your sauce on. Add your tomato slice, pickles, and shredded lettuce and place 2-3 shrimp on top. Enjoy.
