Sweet Potato Casserole

Sweet Potato Casserole

Servings: 12

Ingredients:

  • 2 cans (29 oz. each) sweet potatoes, well drained

  • 2 eggs

  • 1/2 cup milk

  • 2 cups brown sugar, (divided - for casserole and topping)

  • 1 tsp. vanilla

  • 1 tsp. salt

  • 1/2 tsp. cinnamon

  • 1/4 cup butter, melted

  • 1/2 cup flour

  • 1 cup crushed corn flakes

  • Marshmallows for topping (full size or mini)

Preheat oven to 375.

Grease 9x13” baking dish - pyrex or applicable. We used a ceramic baking dish (see below). We also used butter to grease our pan.

In a large bowl, mash sweet potatoes. Add eggs, milk, 1 cup brown sugar, vanilla, salt and cinnamon; mix well. Spread evenly in baking dish.

In a medium bowl, combine butter, flour and remaining 1 cup brown sugar; stir in corn flakes. Sprinkle evenly over sweet potato mixture. Your mixture will sort of “clump.” This is how it should look.

Bake 30 minutes. Remove dish from oven and add marshmallows evenly over the top, mostly covering the entire dish. Place dish back in the oven for about 10 minutes, or until marshmallows are light golden brown.

Remove from oven and let cool for about 10 minutes before serving.
